Chef Ken sharpened his cooking skill at Hotel Okura’s Yamazato restaurant in Tokyo and Amsterdam:
I take especially pride in serving you the Kappo set menu’s. Kappo is a special style of cooking. Kappo means literally means cut (raw) and cooked (warm) dishes. It features a subtle blend of tastes, structure, colour and composition. The first course consists of several small dishes and is very popular. We have Kappo menu’s in friendly priced 3 and 5 course set menu’s for € 40 and € 65 respectively.
Host Ryuji is an expert in combining the best drink to go with the food:
We serve quality wines selected by Vinites Wijnkopers but I look especially forward to serving you our large assortment of sake, and shochu. These are a great combination with raw fish. You can order most sake’s by the glass, so you can try and see for yourself.
